• 2 large zucchinis, diced
• 1 onion, chopped
• 1 cup grape tomatoes, halved
• 1 green bell pepper, diced
• 2 tbsp olive oil
• 1 tsp garlic powder
• 1 tsp Italian seasoning
• ½ tsp salt
• 1 tsp fresh cracked black pepper
• 1 cup grated mozzarella cheese, divided
• 1 tbsp chopped parsley (for garnish)
• ½ tsp crushed chili flakes (for garnish, optional)
Preheat oven to 400°F (200°C).
In a large bowl, toss zucchini, onion, tomatoes, and bell pepper with olive oil, garlic powder, Italian seasoning, salt, and pepper.
Spread the veggie mix in a greased baking dish.
Sprinkle with half the mozzarella cheese.
Bake uncovered for 20–25 minutes, until vegetables are tender.
Remove from oven, top with remaining cheese, and return to oven for 5–7 minutes until bubbly and golden.
Garnish with parsley and chili flakes before serving.
