3 ripe bananas, mashed
½ cup unsalted butter, melted
1 cup granulated sugar
1 large egg, beaten
1 teaspoon vanilla extract
1½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 teaspoons ground cinnamon
¼ cup brown sugar
Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
Mix wet ingredients: In a large bowl, mash bananas. Stir in melted butter, granulated sugar, egg, and vanilla until well combined.
Mix dry ingredients: In a separate bowl, whisk together flour, baking soda, salt, and 1 teaspoon cinnamon.
Combine: Gently fold dry ingredients into the banana mixture until just blended.
Cinnamon swirl: In a small bowl, mix the remaining 1 teaspoon cinnamon with the brown sugar. Pour half the batter into the loaf pan, sprinkle with half the cinnamon-sugar mixture, add remaining batter, and top with the rest of the cinnamon-sugar.
Bake: 55–65 minutes, or until a toothpick comes out clean.
Cool: Let loaf rest in the pan for 10 minutes, then transfer to a wire rack to cool completely.
