1 tbsp olive oil
1 lb lean ground turkey
1 small onion, diced
1 jalapeño, finely chopped (seeds removed for less heat)

1 cup chopped red potatoes (small dice)
2 cups chopped kale
Salt and pepper to taste
2 cups cooked rice (brown or white)
Optional: lime wedges, chopped cilantro
Heat olive oil in a skillet over medium heat. Add ground turkey and cook until browned, breaking it up as it cooks.
