For the Chicken & Vegetables

2 Boneless, Skinless Chicken Breasts, cut into bite-sized pieces

2 Medium Zucchinis, sliced into half-moons

1 cup Cherry Tomatoes, halved

½ Red Onion, thinly sliced

2 Garlic Cloves, minced

2 tbsp Olive Oil

For the Mediterranean Seasoning

1 tsp Dried Oregano

½ tsp Dried Basil

½ tsp Smoked Paprika

½ tsp Salt

¼ tsp Black Pepper

¼ tsp Red Pepper Flakes (optional, for heat)

Instructions

Preheat Oven: Set oven to 400°F (200°C).

Mix It All: In a large bowl, toss chicken, zucchini, tomatoes, onion, and garlic with olive oil and Mediterranean seasoning.
