2 lbs ground beef
1 onion, diced
3 cloves garlic, minced
1 green bell pepper, chopped
2 cans (14.5 oz each) diced tomatoes
1 can (15 oz) tomato sauce
2 tbsp tomato paste
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans or pinto beans, drained and rinsed
1 tbsp chili powder
2 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt (or to taste)
1/2 tsp ground black pepper
Optional: 1/4 tsp cayenne pepper for heat
Brown Beef: In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
Load the Crockpot: Add beef, onion, garlic, bell pepper, tomatoes, tomato sauce, tomato paste, beans, and all seasonings into the slow cooker.
Cook: Cover and cook on low for 6–8 hours or high for 3–4 hours.
