Sweet, savory, and with just the right kick—this Slow Cooker Honey Garlic Chicken is everything you want in a comforting, hands-off meal. Juicy chicken simmered in a sticky garlic-soy glaze that’s perfect over rice or cauliflower for a no-fuss dinner win.
For the Chicken:
1½ lbs boneless, skinless chicken thighs or breasts
⅓ cup low-sodium soy sauce
⅓ cup honey
2 tbsp tomato paste
2 tsp chili paste (Sambal Oelek, Sriracha, or preferred hot sauce)
4 cloves garlic, minced
1 tbsp rice vinegar
2 tbsp cornstarch
For Serving:
Brown rice, quinoa, or cauliflower rice
Toasted sesame seeds
Chopped green onion
In a bowl, whisk together soy sauce, honey, tomato paste, chili paste, garlic, and rice vinegar.
Place chicken in the slow cooker and pour the sauce over the top.
Cover and cook on low for 4–5 hours or high for 2–3 hours, until chicken is tender.
Remove chicken and shred or slice.
In a small bowl, mix cornstarch with a few tablespoons of the hot sauce from the cooker. Stir it back into the slow cooker and cook on high for 10–15 minutes until thickened.
Return chicken to the slow cooker and coat with sauce.
Serve over your choice of rice, topped with sesame seeds and green onions.
