Chia Pudding:
1/2 cup chia seeds
2 cups unsweetened almond milk (or milk of choice)

1 tsp cinnamon
Apple Pie Topping:
1 apple, diced
1/2 tsp cinnamon
1 tsp coconut oil or butter
1 tsp honey or maple syrup
Optional Toppings:
Crushed walnuts or pecans

In a jar or bowl, mix chia seeds, milk, vanilla, sweetener, and cinnamon. Stir well, let sit 5 minutes, then stir again.
