1 cup uncooked quinoa
2 cups water
1 cup shredded carrots
1 cup chopped red bell pepper
1 cup edamame (shelled, cooked)
½ cup chopped cucumber
¼ cup green onions
¼ cup chopped cilantro (optional)
2 tbsp sesame seeds (optional)
For the dressing:
3 tbsp soy sauce or tamari
1 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp honey or maple syrup
1 tsp grated ginger
Rinse quinoa, then cook with water according to package directions. Let cool.
In a large bowl, combine cooled quinoa with all the chopped veggies.
Whisk together dressing ingredients in a small bowl.
Pour dressing over the salad and toss until everything is well coated.
Chill for 15–30 minutes before serving for best flavor.
