For the Meatballs:
2 lbs ground turkey (or ground beef)
1 tbsp olive oil
3 cloves garlic, minced
2 large eggs
3½ tsp Italian seasoning
1¼ tsp salt (adjust to taste)
½ tsp black pepper
2 cups zucchini, finely grated and well-drained (yields about 1 cup after draining)
1 small red onion, grated
For the Sauce:
3 tbsp olive oil
3 cloves garlic, minced
1 (28 oz) can crushed tomatoes
1 tsp salt
½ tsp black pepper
½ tsp sugar
2 tsp Italian seasoning
½ tsp crushed red pepper flakes
Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
In a large bowl, mix turkey, olive oil, garlic, eggs, Italian seasoning, salt, pepper, zucchini, and onion until just combined.
Form into meatballs (about golf ball size) and place on baking sheet.
Bake for 20–25 minutes until browned and cooked through.
