1 cup unsalted butter (softened)
½ cup brown sugar
1 egg yolk
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp cinnamon
½ tsp ground ginger
½ tsp cardamom
¼ tsp cloves
¼ tsp allspice
¼ tsp salt
⅓ cup apple butter (for filling)
Preheat oven to 350°F. Line a baking sheet with parchment.
Cream butter and sugar until light. Mix in egg yolk and vanilla.
In a separate bowl, whisk flour with all spices and salt. Add to wet mix.
Roll dough into 1-inch balls. Place on baking sheet and press a thumbprint into each.
Fill each center with ½ tsp apple butter.
Bake 12–14 mins until edges are lightly golden. Cool completely.
