Churro Pumpkin Bites

We made these for a fall party once—and they were gone before the cider was poured. Think crispy outside, fluffy pumpkin center, and that classic cinnamon-sugar coat. Whether you dip, dunk, or devour them warm from the pan, these bites bring big autumn energy in the tiniest, tastiest way.

Ingredients

Scale

1 cup all-purpose flour

1 tsp baking powder

½ tsp cinnamon

¼ tsp salt

¼ tsp nutmeg

½ cup pumpkin puree

¼ cup sugar

1 egg

1 tsp vanilla extract

2 Tbsp milk

Oil for frying

Cinnamon Sugar Coating:

½ cup sugar

1½ tsp cinnamon

Instructions

In a bowl, whisk flour, baking powder, spices, and salt.

In another bowl, mix pumpkin, sugar, egg, vanilla, and milk.

Combine wet and dry until smooth.

Heat oil (about 350°F) in a deep pan. Drop spoonfuls of batter and fry 2–3 mins per side until golden.

Drain and toss immediately in cinnamon sugar.
