Mediterranean Ground Beef Stir Fry

This recipe takes me back to Sunday lunches with family—where sizzling pans met sunshine and fresh herbs. It’s hearty yet healthy, with bold spices, juicy veggies, and creamy feta. 1 lb ground beef

1 tbsp olive oil

1 small onion, diced

3 cloves garlic, minced

1 bell pepper, chopped

1 zucchini, diced

1 cup cherry tomatoes, halved

½ cup Kalamata olives, sliced

1 tsp oregano

½ tsp cumin

½ tsp paprika

Salt & pepper to taste

¼ cup feta cheese, crumbled

Fresh parsley, for garnish

Instructions

Heat olive oil in a large pan over medium heat. Sauté onion and garlic until fragrant.

Add ground beef and cook until browned, breaking it apart as it cooks.

Stir in bell pepper, zucchini, and cherry tomatoes. Cook until softened.

Season with oregano, cumin, paprika, salt, and pepper. Mix well.

Toss in olives and cook for another 2 minutes.

Remove from heat. Sprinkle with feta and garnish with parsley.

Serve as is or with rice, quinoa, or pita bread.
