Dry Ingredients:
• 1½ cups quick oats
• ¾ cup old-fashioned oats
• 1 cup oat flour (or whole wheat flour)
• ¼ cup ground golden flax or chia seeds
• ¼ cup chopped walnuts
• 2 tsp ground cinnamon
• 1 tsp baking powder
• ¼ tsp fine sea salt
Wet Ingredients:
• ½ cup unsweetened applesauce
• ⅓ cup honey
• 4 tbsp oil, melted butter, or coconut oil
• 2 large eggs
• 1 tsp vanilla extract
• 1 cup shredded zucchini (well-drained)
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine all dry ingredients.
In another bowl, whisk together applesauce, honey, oil, eggs, and vanilla.
Stir in the shredded zucchini.
Add wet ingredients to the dry and mix until combined.
Scoop dough (about 2 tablespoons each) onto the baking sheet.
