1 cup shredded zucchini, well drained
1 clove garlic, finely grated
⅓ cup breadcrumbs
¼ cup grated Parmigiano-Reggiano
1 large egg
2 tbsp chopped fresh chives (or 1 tbsp dried)
1 tbsp chopped fresh parsley (or ½ tbsp dried)
1 tsp chopped fresh basil (or ½ tsp dried)
1 tsp chopped fresh oregano (or ½ tsp dried)
Pinch of salt & pepper
Marinara or ranch for dipping
Preheat oven to 400°F (200°C). Grease or line a baking sheet.
Squeeze all excess moisture from zucchini using a clean towel.
In a bowl, mix zucchini, garlic, breadcrumbs, cheese, egg, and herbs. Season with salt and pepper.
Form into 1-inch balls and place on baking sheet.
Bake 18–20 minutes, flipping halfway, until golden and firm.
